MEET OUR TEAM

RESTAURANT HOSTESS     ELAINE AHEARNE

 Elaine has over fourteen years experience in the hospitality industry mainly working with Food & Beverage.  Coming from a background which includes managing 4*Restaurants from Cavan to Cork.  In previous establishments Elaine has helped bring standards to Mitchelin Bib Gourmand Award calibre and maintained professional standards relating to Georgina Campbell’s Good Food Ireland, Irish Bridge Stone Guide and Lucinda O Sullivans Little Black Book of Places to Eat & Stay in Ireland.  Elaine will be fronting The Liberties Bell Bistro with a well travelled team of professionals, providing a friendly, comfortable, inviting and newly refurbished eatery.

HEAD CHEF  ALAN SHEELAN

Alan is a local chef with The Four Seasons Hotel in Carlingford and has been employed here for four years.  He graduated from The Newry and Mourne Catering College in Newry in 1990 and was awarded the title of Chef of the Year on his graduation. In 1997 Alan returned to college and completed an Advanced Diploma in Culinary Cuisine.  He works mainly with local produce.  He spent a summer season in Boston working with World Class Chefs cooking and serving Premier Gourmet Dishes.  He also cooked a wide range of menus including lunches, Gala and Corporate Dinners.  Alan has a superior level of gastronomic experience including French and European Cuisine.

SOUS CHEF   RAFAL SVCHOLAWSKI

Rafal has been employed with The Four Seasons Hotel in Carlingford for the last three years.  He has worked in Fine Dining Restaurants across Ireland. From 2002 to 2004 Rafal worked in Palmers Green Restaurant in London where he gained excellent culinary skills and had great input and influence towards menus.  Rafal has a flare for food and passionate about quality, tasteful and vibrant dishes.
